My Wife Loves Me (She makes me Brussels Sprouts)

She was gone for a whole week. She went to the Institute for Functional Medicine conference in Atlanta and came back loaded with information about health. The funny (or dramatic) thing is that while she was gone I made my way to Jack in the Box a couple of times, I made a pit stop at panda Express on a certain occasion and to top it off… I had some tacos in Tijuana before she came back.

Mind you, I am somewhat conscious about my health. There has even been some times in which my diet has consisted in nothing but natural foods, fruit, vegetables, some protein supplements, fish, chicken and prime meat. I went years without drinking a single soft drink, or even coffee and fast food restaurants weren’t even part of my conception of reality. Then I recapitulated and decided that a little bit of some things wouldn’t be so bad, so I started having an occasional pop. Every once in a while I would go the jack in the Box (for some reason I am under the impression that this place is the least harmful of the bunch).

I’ll be completely honest: We like good food. Wait, let me rephrase that: We like tasty food. And we like indulging ourselves, and hot dang it we do love us some tacos from “El Frances.” What can I say? They are really yummy. (Right baby?) But all those exotic delicatessens are going to have to wait because we are diving head first into an elimination diet that’s going to rock our private little world from our taste buds. But that’s ok; the spicy chicken sandwich is not that good anyways. I am going to miss panda though, at least for a few weeks until we start introducing the eliminated items back into our diet, contingent of course to how we feel when we do so.

I feel good about this. We are going organic on all we can go organic with not just food. Did you know that they make organic mattresses? They have found rat poison on the regular ones. So, we started making changes a while back and this is just a continuation of that process and maybe even an evolution in it. She made me Brussels sprouts for lunch today, the first time I ever have them and they were really tasty. I had them along with a piece of tender rosemary roasted organic chicken.

I am thankful for all of this. I am grateful that I can learn better ways to take care of my body. I am thankful that I can enjoy all of this and share it with whoever reads this, and most of all, I am thankful for having married such a wonderful woman who takes care of me and makes me Brussels sprouts for lunch.
